Preparation
Preheat the oven to 190°. Boil the milk with the sugar and vanilla Take off the heat and add the eggs, stirring. Remove the vanilla sticks, transfer to 1.5 litre pudding mould and place in a roasting tray of warm water to create a water bath.
Place in the oven and cook for 30-40 minutes, until golden on top. Remove from the oven and chill. Unmould and make the topping when ready to serve. Sprinkle the sugar over the pudding and heat with a blowtorch until caramelised.
